Recipe:

The Soup

1 tbsp. Ghee or Coconut Oil
1 Shallot, Peeled and Diced
1 Bunch Asparagus Trimmed and Chopped 3 Cups Vegetable Stock
4 oz. Coconut Cream
Salt & Pepper to Taste
Garnish: Cilantro Pesto

Instructions

Melt the oil in the pot. Add shallot and cook 3 minutes stirring frequently to avoid burning. Add asparagus and cook an additional 5 minutes. Add stock and coconut cream. Cook for 10 more minutes. Using a hand blender, puree. Salt and pepper to taste. Garnish with the cilantro pesto.

The Pesto

1 Bunch of Cilantro, Washed and De-stemmed
1⁄2 Cup of Pumpkin Seeds
1⁄4 Cup of
Extra Virgin Olive Oil
Juice from 1 Lemon
Salt & Pepper to Taste

In a Cuisinart add all ingredients and mince.
